After last nights’ melt down from me after my kids refused to eat another healthy dinner I had cooked, opting instead for rice and instant gravy, I decided that tonight I would cook exactly (and only) what I wanted to eat which was my craving – my super-easy, super-healthy one pot roast chicken and vegetable dish.

And I decided that I would not be preparing any alternative, and if they didn’t want it, they could really and truly starve! With that said, any meal that can be cooked entirely in ONE dish is a winner for me.

Here is my personal recipe for One Pot Roast Chicken and Vegetables:

Ingredients:

  • 2 Chicken breasts (No skin, no bone), chopped into bite size pieces
  • ½ a Butternut
  • ½ a head of Cauliflower
  • ½ a head of Broccoli
  • 1 Red Onion
  • 1 Yellow Pepper (or any colour you want)
  • 2 Sweetcorn, cut/broken into 4 pieces each

Please Note: All vegetables should be fresh.

 Method:

  1. Preheat your oven to 180 ËšC (356 ËšF)
  2. Parboil the sweetcorn for 10/15 minutes
  3. Chop all veggies into bite size pieces, not too small
  4. Put the chicken pieces into a microwaveable bowl, sprinkle generously with chicken spice, drizzle with olive oil and mix. Microwave on 600 (mid range heat) for 3 minutes.
  5. Put all veggies, corn and chicken pieces in an ovenproof dish. Generously sprinkle with salt, pepper, and Garlic & Herb* seasoning mix. Mix well.
  6. Cover with tin foil and put in the oven for 20 minutes.
  7. After 20 minutes, remove from the oven, remove the foil, mix, and put back in the oven for another 15 minutes – uncovered.

Please note: All cooking times are based on my family’s preference. We prefer our veggies to be medium soft, so if you want them crispy, then cook them for less time. If you want them really soft, cook for longer.

* I use Ina Paarman’s Garlic & Herb seasoning. It is my absolute essential cooking seasoning and I use it on everything, from a topping on grilled cheese on toast, to mushrooms, to salad, to pork chops and even roasting veggies. It also comes in a low-salt version.

You can serve it as is, or add it to rice, pasta or pre-cooked quinoa. We had it just like that, and my kids actually ate everything on their plate!!!! Well, except for the peppers, but that’s okay. I honestly couldn’t believe it.

A one-pot roast chicken and vegetables dish is not only delicious but also packed with several health benefits.

Here are 10 key reasons why you should make one pot roast chicken and vegetables for your family

1. High-Quality Protein

  • Chicken is an excellent source of lean protein, which helps build and repair tissues, supports muscle growth, and keeps you feeling full longer. It’s also lower in fat (especially when skinless) compared to red meats.

2. Rich in Vitamins and Minerals

  • Vegetables like carrots, potatoes, broccoli, onions, or zucchini provide essential vitamins and minerals:
    • Carrots: High in beta-carotene (converted to vitamin A), supporting eye health.
    • Broccoli: Rich in vitamin C, vitamin K, and fibre for immunity and bone health.
    • Potatoes: Provide potassium, which is essential for heart and muscle function, along with complex carbs for energy.
  • Chicken itself contributes B vitamins (e.g., B6 and niacin) that support brain function and energy metabolism.

3. Rich in Antioxidants

  • Herbs like rosemary, thyme, and garlic (often used in roasted dishes) are full of antioxidants that combat inflammation and support heart health.

4. Fiber for Digestive Health

  • Vegetables are high in dietary fiber, which promotes healthy digestion, stabilizes blood sugar levels, and supports heart health by managing cholesterol levels.

5. Heart-Healthy Fats (if olive oil is used)

  • If you roast the dish with olive oil, you’ll get monounsaturated fats, which are excellent for heart health, reducing bad cholesterol, and improving good cholesterol.

6. Low in Processed Ingredients

  • This homemade dish typically avoids processed additives and excess sodium, making it a cleaner, whole-food meal.

7. Promotes Satiety and Balanced Nutrition

  • The balance of protein, healthy fats, fiber, and complex carbohydrates provides sustained energy, stabilizes blood sugar, and keeps you full longer, preventing overeating.

8. Supports Weight Management

  • A one-pot meal like this is nutrient-dense but relatively low in calories (depending on portion sizes), making it a great option for weight maintenance or loss.

9. Boosts Immunity

  • A mix of chicken, vegetables, and herbs delivers immune-supporting nutrients like vitamin C, zinc, and antioxidants, helping your body fight off illness.

10. Easy to Digest and Versatile

  • This dish is gentle on the stomach (especially if the chicken is roasted without heavy spices) and can be modified for various dietary needs (low-carb, keto, etc.).

Cooking Tips for Maximum Benefits:

  • Use skinless chicken to reduce saturated fat if desired.
  • Opt for a variety of colourful vegetables for a broader range of nutrients.
  • Avoid salt overload; season with herbs, garlic, or lemon for flavour.
  • Use healthy cooking fats like olive oil or avocado oil.
