With winter approaching us here in Southern Africa, it’s time to close the windows and doors early in the evening, and people all across the land will start wearing ALL their jackets, jerseys, coats and socks in an effort to stay warm. When it’s cold I love to make a thick hearty soup, and often experiment with different veggies. I hardly ever make meaty soups.
Since no one else in my family eats soup other than packet mix chicken noodle, I am free to add whatever I want into it without having to take into consideration three other people’s likes and dislikes. I make batches at a time and freeze individual portion sizes which I reheat when needed.
Last night I decided on Roasted Butternut, Potato and Cream Cheese.
